			<content:encoded><![CDATA[<p>this past weekend we ate lots of peaches. they were little spheres of pure sweetness!! there is just nothing like biting into a big, sweet, juicy peach on a HOT summer day.</p>

<p>we picked up two baskets of these babies.</p>

<p>although these peaches are yum-O on their own, you all know there is just nothing better than homemade peach ice cream.</p>

<p>:: here is the recipe ::</p>
<h2><strong><span style="color: #ff6600;">my grandma&#8217;s homemade peach ICE CREAM</span></strong></h2>
<p>6 eggs</p>
<p>1 can condensed sweetened milk</p>
<p>3 cups sugar</p>
<p>1-1/2 t. vanilla</p>
<p>-Blend the above ingredients in a blender until throughly combined. Whisk in <em>1 large can of evaporated milk</em>. Stir in 7-8 mashed <em>fresh peaches</em>.</p>
<p>-Put the mixture in electric ice cream maker. Fill with <em>whole milk</em> until it reaches the &#8220;fill line&#8221;. Let it do its thing for per the instructions included with the machine. And finally ENJOY!!</p>
<p>Oh and better yet&#8230;</p>
<p>if you live in Auburn and do not feel like making your own homemade ice cream, you can buy it by the pint at <a href="http://www.amsterdamcafeauburn.com/">Amsterdam Cafe</a>. I do kind of find it ironic to &#8220;buy homemade ice cream&#8221;. But hey you cannot go wrong with anything from Amsterdam. They buy local, and as a matter of fact their peach ice cream is made with <a href="http://www.durbinfarms.com/">Chilton County Peaches</a> too. It is DELICIOUS.</p>

			<content:encoded><![CDATA[<p>Spring is in full force here, and pretty Sunday afternoons are usually good recipes for Sunday afternoon baseball games. A good reason to spend time outside, and that of course demands the NEED to visit the yummy concession stand <span style="text-decoration: line-through;">maybe even twice</span> during the baseball outing. But what if you just want the tasty treats without the longgggg baseball game? It is kind of like going to Target for popcorn, but not wanted to go to a movie. You know what I mean? So what&#8217;s the alternative? MAKE YOUR OWN homemade <a href="http://www.marthastewart.com/recipe/soft-pretzels">soft PRETZELS</a> with MUSTARD. In this case, make em&#8217; tiny and everyone gets their own. Then there is not need to share one BIG one, which always successfully ends in a fight over who gets the &#8220;doughy&#8221; piece from the middle overlapping pieces.</p>

<p>There is just nothing like the smell of cinnamon baking away in the oven. These beauties pretty much smell like a lazy Saturday morning with coffee in hand.</p>

			<content:encoded><![CDATA[<p>Our lives these days consist of engagement parties, bridal showers, weddings, and more engagement parties. It&#8217;s crazy&#8230;but a weekend without one of these events is extremely rare. Last night&#8217;s occasion, an engagement party. The host are all bringing something different, from us&#8230;a vegetable appetizer. The dilemma: nobody every really eats anything from the plain vegetable tray. Why? I dunno. Personally I LOVE fresh vegetables. Yhey usually involve a lot of prep work, and at the end of the night only 1/8th of the veggie tray has even been touched. End result, depressing. All that work and money, and no one even touches it. Haven&#8217;t you all ever heard of being healthy?? So what to do, what to do? We&#8217;re going to give this <span style="text-decoration: line-through;">made-up</span> adapted recipe a try&#8230;</p>
<p>Start with LOTS of asparagus. Snap the end off, leaving just the tips. Bend the end, and where it naturally snaps=the perfect amount of &#8220;stalky&#8221; end gone! In small batches, blanch the asparagus in a large fry pan filled with about 1/4&#8243; of water &#8211; about 6-7 minutes. Remove from pan and season with salt and pepper, set aside.</p>

<p>Spoon four containers of chive and onion flavored cream cheese into a small bowl &#8211; let it soften at room temperature.</p>

<p>Add four small (or one large) red pepper, thinly diced.</p>

<p>about 10 slices of crumbled bacon, and a pinch of red pepper to season.</p>

<p>Mix all of those ingredients into the cream cheese until well blended. This mixture in and of itself is tasting worthy&#8230;for real!</p>
<p>Next step buy LOTS of crescent rolls. They make seamless sheets now, but the grocery store was out.</p>

<p>Unroll the crescent dough onto a non-stick surface, and spread with the cream cheese mixture. Add A LOT, do not be stingy&#8230;this is the good <span style="text-decoration: line-through;">unhealthy</span> stuff that makes people eat the vegetables. Kind of contradicting the idea of making a healthy appetizer, right?</p>

<p>Next, sprinkle with parmesan cheese and cut the dough into thin slices.</p>

<p>roll on asparagus tip per slice of crescent dough.</p>

<p>As you go place the individual appetizers on an un-greased cookies sheet.</p>

<p>and after you&#8217;ve rolled all of them up <span style="text-decoration: line-through;">200 of these babies in my case</span>, bake at 325 degrees for about 8 minutes. Watch them carefully, you want the crescents to just be slightly brown on top.</p>

<p>and TA DA&#8230;all toasty and golden brown with a SPARK of deliciousness!</p>

<p><strong>Layer 2: </strong><em>the goodness! </em>cool whip + powder sugar + vanilla extract + cream cheese</p>

<p><strong>Layer 3: </strong>a big size box of instant chocolate pudding, made according to package directions</p>

It is super easy, and even more SUPER YUMMY!! <div>But without clouds, there is never a second of relief from the direct beaming sunlight putting wrinkles on my face. So, yes it is true&#8230;I am the person that buys this stuff: SPF 70 sunblock lotion. I bet you saw this and thought SPF70?? Who really wears that, besides babies?? Why even go out in the sun? Well, lets just say I am rocking the &#8220;positively ageless&#8221; claims by Aveeno!</div>

<div>But we all know the real truth. It does not matter what SPF we wear, the best SPF is to simply go inside. In most cases there is no FUN in that when it&#8217;s a pretty day. But, the heat had drained my energy, and the word Target entered my thoughts. So I hope in the car and 2 miles away, I grace Target with my slightly sun-kissed presence {what the SPF didn&#8217;t BLOCK}. What caught my eyes first? Father&#8217;s Day Cards&#8230;What a special day for daddies and their little girls!! </div>

<div>And after I scoped out EVERYTHING on the shelves in Target, from garden pots to Kashi cereal, I made a trip to Barnes and Noble. Here I spent 2 long hours looking at books and magazine while sipping a <a href='http://en.wikipedia.org/wiki/Café_au_lait'><span style='color: rgb(102, 102, 102);' class='Apple-style-span'><span style='font-style: italic;' class='Apple-style-span'>cafe au lait</span></span></a> from the coffee cafe. Which throughly caffeinated me for a fun dinner evening with my dear friend Cantrell and her family at their beach villa. {I am so mad at myself, but I snapped NO pictures that evening. Please, shed a few tears with me.}</div>

<div>naturally I choose a pasta dish (remember I was in Italy for months)&#8230;everything looks SUPER so I literally had to put my indecisiveness aside and just go with one:</div>

<div>4 slices (each about 1/2 inch thick)</div>
<div>2 cloves garlic, peeled</div>
<div>2 heads (about 2 lbs) cauliflower</div>
<div>3 Tbsp olive oil </div>
<div>salt</div>
<div>3/4 lb whole-wheat penne</div>
<div>1/4 cup lemon juice</div>
<div>1/4 cup fresh parsley leaves, chopped</div>
<div>3 Tbsp capers, drained</div>
<div>1 tsp red pepper flakes</div>
<div>1/4 cup grated parmesan cheese </div>

<div>Preheat oven to 300F. Place bread slices on a baking sheet and bake until crisp and dry, about 30 minutes. Rub one slide of each slice with a garlic clove. Cool, then tear into chunks. Put in a food processor and process into coarse crumbs. Increase oven temperature to 400F. </div>

<div>Cut cauliflower into quarters. Discard leaves and cores and cut into slices about 1/4-1/2 inch thick. Mince remaining clove of garlic. Put cauliflower in a large baking pan and gently toss with olive oil, 1/2 tsp. salt, and minced garlic. Roast, stirring after 10 minutes, until cauliflower is browned on edges and tender when pierced, about 20 minutes. </div>

<div>Cook pasta in a large pot of salted water until al dente, about 12 minutes or according to package directions. Drain, reserving 1/2 cup of cooking water. Return pasta to pot and mix with cauliflower, lemon juice, parsley, capers, red pepper flakes, and reserved cooking water. Stir in bread crumbs and cheese and serve at once. </div>
